Mulled Wine Ham Glaze

Mulled-wine-glazed-ham Baby Champagne Ham

  • half 750ml bottle red wine
  • 5 black peppercorns
  • 5 juniper berries 
  • 5 whole cloves
  • half lemon, zest and juice
  • 250g Demerara sugar
  • whole cloves to stud ham

Whole Leg Ham

  • 750ml bottle red wine
  • 10 black peppercorns
  • 10 juniper berries
  • 10 whole cloves
  • 1 lemon, zest and juice
  • 500g Demerara sugar
  • whole cloves to stud ham

Pour the wine, spices, zest, juice and sugar into to a large pot and reduce to liquid down to 250mls for a baby ham and 500mls for the whole leg ham.

Heat the oven the 180°C. Line a baking tray completely with *foil and place a baking rack on top. Prepare the ham by gently removing the skin but be careful to keep the layer of fat below in tact. Score criss cross diamonds lightly through the fat with a sharp knife. Place a clove into the centre of each diamond. The cloves serve the double purpose of flavouring the meat while helping to hold the fat in place while it roasts.

Place the ham onto the rack. Brush glaze with a pastry brush all over the ham. Place in the oven and baste with extra mulled wine glaze every 10 minutes. The ham takes around 30-40 minutes to glaze. When you remove the ham from the oven, give it one last brush with the glaze for an extra sticky red ham.

* The foil protects the tray from burnt sugar for a speedy clean up.
