Saffron and Honey Ham Glaze


Baby Champagne Ham

  • ½ cup runny honey 
  • .5g saffron thread
  • ¼ cup Dijon mustard
  • whole cloves

Whole Leg Ham

  • 1 cup runny honey
  • .5g saffron thread
  • ½ cup Dijon mustard
  • whole cloves

Heat the honey in a medium sized pot with the saffron until it starts to simmer. Remove from the heat and leave for at least an hour so the flavour and colour of the saffron can disperse through the honey.

Heat the oven the 180°C. Line a baking tray completely with *foil and place a baking rack on top. Prepare the ham by gently removing the skin but be careful to keep the layer of fat below in tact. Score criss cross diamonds lightly through the fat with a sharp knife. Place a clove into the centre of each diamond. The cloves serve the double purpose of flavouring the meat while helping to hold the fat in place while it roasts.

Place the ham onto the rack. Stir the mustard through the honey and brush with a pastry brush all over the ham. Place in the oven and baste with extra saffron honey glaze every 10 minutes.
The ham takes around 30-40 minutes to glaze.

* The foil protects the tray from burnt on honey for a speedy clean up.
